This aromatic curry takes inspiration from the warm, gently sweet spices associated with Cape Malay cooking. Chicken thighs stay tender and make the dish forgiving for everyday cooking.

Sweet potato can replace ordinary potato. For a meat-free version, use two tins of drained chickpeas and reduce the simmering time.

Method

    Heat 1 tablespoon oil in a large pot. Brown the chicken in batches, then transfer it to a plate.

    Add the remaining oil and cook the onion for 6 minutes. Stir in the garlic, ginger, coriander, cumin, turmeric, cinnamon and chilli for 30 seconds.

    Add the tomatoes, stock, potatoes, carrots and browned chicken. Bring to a gentle simmer.

    Cover and cook for 25–30 minutes, stirring occasionally, until the chicken is cooked through and the vegetables are tender.

    Stir in the chutney and lemon juice. Season to taste and simmer uncovered for 5 minutes if the sauce needs to thicken.

    For the rice, rinse the basmati until the water runs mostly clear. Place it in a saucepan with the water, turmeric, cinnamon stick and raisins.

    Bring to a boil, cover, reduce the heat to low and cook for 12 minutes. Turn off the heat and stand, covered, for 10 minutes before fluffing with a fork.

    Serve the curry with yellow rice and fresh coriander.
