Method

    Drain the soaked samp and beans and place them in a large heavy-based pot with 2 litres of fresh water.

    Bring to a boil, skim off any foam, then reduce the heat. Cover partially and simmer for 1½–2 hours, stirring occasionally, until tender. Add a little hot water if the mixture becomes dry.

    Stir in the salt during the final 15 minutes. For a creamier texture, mash a few spoonfuls of the cooked beans against the side of the pot.

    Meanwhile, heat the oil in a wide pan. Cook the onion and carrots for 5 minutes. Add the peppers and cook for another 5 minutes.

    Stir in the garlic, curry powder and paprika for 30 seconds. Add the chopped tomatoes and simmer uncovered for 10 minutes.

    Fold in the baked beans and cook for 5 minutes. Finish with lemon juice, herbs and black pepper.

    Spoon the creamy samp and beans into bowls and top with the warm chakalaka.
