This bobotie-inspired bake balances gentle Cape-style spice with a lightly sweet-and-savoury finish. It is designed for an ordinary family kitchen and can be assembled earlier in the day.

    Heat the oven to 180°C. Lightly grease a medium baking dish.

    Warm the oil in a large frying pan. Cook the onion for 6–8 minutes until soft, then stir in the garlic and spices for 30 seconds.

    Add the mince and cook over medium-high heat, breaking it up with a spoon, until evenly browned.

    Soak the bread in 125 ml milk for 2 minutes. Mash it with a fork, then stir it into the mince with the chutney, jam, lemon juice and raisins. Season with salt and pepper.

    Spoon the mixture into the baking dish and press it into an even layer.

    Whisk the eggs with the remaining 250 ml milk. Pour over the mince and arrange the bay leaves on top.

    Bake for 30–35 minutes until the topping is set and lightly golden. Rest for 10 minutes before serving.
