    Heat the oven to 180°C. Grease a 23 cm square baking dish or similar-sized ovenproof dish.

    Heat the oil in a frying pan. Cook the pepper and spring onions for 5 minutes. Add the spinach and stir just until wilted.

    Whisk the eggs, cottage cheese, milk, herbs, salt and pepper in a large bowl.

    Spread the cooked vegetables over the baking dish and pour over the egg mixture. Sprinkle with cheddar if using.

    Bake for 25–30 minutes until the centre is set and the top is lightly golden.

    Stand for 10 minutes, scatter with parsley and cut into six portions.
