Method

    Heat the oil in a large frying pan over medium-high heat. Brown the chicken in batches, then transfer it to a plate.

    Reduce the heat to medium. Cook the onion for 5 minutes, then stir in the garlic, peri-peri sauce and paprika for 30 seconds.

    Add the tomato paste and stock, scraping up any flavour from the base of the pan.

    Return the chicken to the pan and simmer for 10–12 minutes until cooked through.

    Stir in the cream and simmer gently for 3 minutes. Add the spinach in handfuls and stir until wilted.

    Finish with lemon juice, season to taste and scatter with parsley.
