Method

    Heat the oven to 210°C. Spread the peppers, courgettes and red onion over a large tray. Toss with 1 tablespoon oil, season and roast for 25 minutes.

    Heat the remaining oil in a large frying pan. Add the beef and cook until browned, breaking it up with a spoon.

    Stir in the garlic, cumin, coriander and paprika for 30 seconds. Add the tomato paste and cook for 1 minute.

    Fold in the lentils and water. Simmer for 8–10 minutes until thickened, then season to taste.

    Mix the yoghurt, cucumber, lemon juice and herbs in a small bowl.

  6. 06

    Divide the roasted vegetables and beef-lentil mixture between bowls. Add a spoonful of cucumber yoghurt and serve.
